Cooking Slump



That's what I'm in. I feel like I make the same meals over and over again. I have no creativity and not a large budget, so I end up making my easy "go to" meals. I'm sure there are a lot of you out there that have the same problem. The thing is...your "go to" meals may be different from mine. I would love to have some easy but tasty recipes, if you are willing to share.


Here is one of my family's favorites. It is a crock pot recipe and SO easy.


Put 3 or 4 boneless, skinless chicken breasts at the bottom of the crock pot.

Mix 1 can of cream of chicken soup with 1/3 cup of milk and pour over chicken.

Mix 1 box of stove top stuffing with 1 cup of water and pour that on the top.


Cook on low for apx 6 hours.

(I will cook it for 6-8 hours if I am using frozen chicken.)

first you put your seat belt on, then you put the car in reverse. Next you head to Wendy's. Then back home again. get the plates, katsup and napkins out and dig in!!!! Now thats easy cooking!! And with the way your kids eat....should be a lot cheaper than what I would have to pay! ha-ha

I make a quick Enchilada cassarole that never gets old. All you need is:

1 package of premade maza (corn) tortillas - 36 count

2 cans of mild or hot enchilada sauce (mild ideal for kids)

1 16 oz. package of mexican cheese. It's a mix of three cheeses already grated

1 16 oz. package of mozzarela cheese (grated)

2 lbs of hamburger meat
or 6 leg and thighs or 5 large breasts

Cook hamburger meat accordingly (drain grease), salt and pepper to your taste. Too much seasoning is not necessary
Or boil seasoned skinless chicken until it begins to fall off the bone. Remove from bone and shredd. Set broth to the side. Add cans of enchilada sauce into the pan with meat. Microwave tortillas just to get them soft enough to manage. Place one layer of tortillas on a 13x9 bakeware pan. Add layer of meat and sauce of your choice. Add layer of cheese. Repeat steps until you have reached the top of pan. Don't over fill. Bake for about 45 minutes. Serve with mexican rice (use broth to cook rice) on the side or eat alone. Either way you, your family and friends will ask for seconds. Simple quick meal. Yum

(other additions: diced mushrooms, black olives, and/or tomatoes without juice)
